Successful competitions require a well-stocked cellar. While we build the infrastructure for the Ogopogo Challenge, we also find time for the projects that ignite our passion. This week, we fired up the kettles at Cockatrice Brewery for a personal favorite: Morgana’s Mystical Merkin.

This Bourbon-Oaked Imperial Stout demands respect. We started with a mountain of Simpsons Malt to create a massive, complex base.
Balancing that much sugar requires a heavy hand with the hops, and we pushed the limits. We tucked the brew into the fermenter late Friday afternoon. By Saturday morning, the yeast took hold with incredible force.
This vigorous fermentation signals a healthy start for what will eventually become a rich, oak-aged beast. We aren’t entering this one in the competition; we brewed it simply for the love of the craft.
